As the leaves change colors and the crisp dry air settles into Midcoast Maine, our seasonal menus go through their own transformation. At Vintage Room – our lobby bar in Camden, ME – local ingredients and spirits are just as important behind the bar as they are in the kitchen. And with the holidays right around the corner, it’s a great time to start thinking about the perfect cocktails for your meals and get togethers.
We asked chief mixologist, Megan Welms, to share some of her favorite Bay View Collection creations. From warm cocktails to sip by the fire to new ways to toast to a day at the apple orchard, we hope you are inspired to experiment with the flavors of winter. We’re confident they will make your spirits bright!

Mulled Wine
Bottle of red wine infused with orange zest, cinnamon, cardamom, star anise, clove & black peppercorn
Simmer & serve warm out of a Vintage Crockpot
Cinnamon stick garnish
Serves 4 glasses.

“Is It Thyme” (zero proof)
1 ounce pomegranate juice
1/2 ounce lemon
1/2 ounce thyme agave simple syrup
Top with soda water
Garnish with thyme sprig and lime wheel
If you prefer something a little harder, tequila pairs well with this drink.

Apple Bottom Squeeze
1 ounce Beefeater Gin
1 ounce Amaro
1/2 ounce cardamom simple syrup
Splash of local apple cider
Top with local sparkling alcoholic dry cider such as Freedom’s Edge
Garnish with sugar & cinnamon apple slice

Ghost of Mary (Martini)
2 ounces Tito’s vodka
1 ounce clarified heirloom tomato mix
2 dashes celery bitters
Salty, smoked paprika rim
Sprig of parsley
